Mac N' Cheesin It

One of my favorite meals to make is the never failing mac n' cheese. It's not only a hit with the kids but the adults too. This recipe is from my grandmother who always made this on the holidays. The Ritz crackers and shredded cheddar cheese make this dish amazing.

Using cooked elbow noodles divide them into two groups (the first will go on the bottom of the dish and the second on top). Place your first group of noodles in a oil sprayed cooking dish and top with cheese.



Then place the second group of noodles on top and do the same. Top with another layer of cheese. Now on this layer you will add 1 cup of milk mixed with one whole egg and pour it over your noodles and cheese. Here comes the best part. -- Crush up Ritz crackers and crumble over top  (if you don't like getting messy just crush them in a baggy).


Then top with butter (if desired) I do this to help the crackers get a golden look in the oven and it gives you that extra "bad for you but it's so good" taste.


Then pop it in your preheated oven (350 degrees) for about 25-30 minutes, until the milk is no longer present.



Now as you have noticed in some of my other recipes I don't use many measurements so use as many noodles, as much cheese, and as many crushed crackers as you please.

My Tip: My kids love sliced ham and onion adding into it. Spice it up a little and try new ingredients in your dish.
